Black and Blue Berry Porridge. 

There’s something ridiculously comforting about a huge bowl of Porridge. Always been a favourite of mine. And it’s the ultimate lazy Sunday Breakfast.. back when I was little a big bowl of Porridge with Sugar and Jam used to be my preference. I’ve not drifted too far from that now , topping with a fresh fruit compote and a good drizzle of Honey… yep. My sweet tooth is still going strong , but we’re a little more refined these days. At least that’s what I keep telling myself.
Serves one. Preferably back in bed with a good book.
Recipe :

1 Cup Almond Milk

1/2 Cup Quick cook Oats

1/2 Tsp Vanilla Paste

Handful Blueberries

Handful Blackberries

Drizzle of Honey. Or Maple works great too.

Pop your berries into a small saucepan with a splash of Water. Pop it over a medium heat until bubbly and soft.

Heat the Milk in a sauce pan over medium and when hot stir through the Oats and Vanilla.

Pile everything into a bowl as you please and drizzle away with something sweet and sticky.

Enjoy !

Jumping on the Pumpkin Spice  Bandwagon… Pumkin Orange Smoothie Bowl.

Ok. So. It’s that time of year again. When suddenly everything goes Pumpkin spice flavoured. Some I understand , others leave me a little weary…I mean seriously. But it’s huge. It’s everywhere. And as the saying goes , if you can’t beat ’em? Join them. So here we go…

Since its still boiling in Florida , and not really warm food weather yet, I went with smoothie Bowl. And I almost hate to admit it , but I loved it… and now I’m sold. Pumkin spice me up.
Recipe serves one

1 Frozen Banana

1 Orange

1/3 Cup Pumpkin

1/2 Tsp Pumkin spice

2 Tbs Maple Syrup

Optional toppings : Pumpkin seeds , clementine segments , fresh Nutmeg, Pecans.
Peel the Orange and throw in the blender with all the other smoothie ingredients.

Top as you like ! Go on. Make it pretty.

Spinach Mango Smoothie Bowl ! 

Really feeling my smoothie bowls lately. Love a cold sweet treat on a hot Florida day. They’ve kept me going all summer long. This had been this week’s prominent flavour. I like to make the same thing over and over again until I’m sick of it. I’m handle like that..

Don’t let this shocking green hue put you off either. I promise you it’s sweet and delicious ! Just like me ey?

Recipe :

1/2 a Frozen Banana

1/2 Fresh Mango

1 Handful spinach.

Wizz up with a little Orange juice if you need extra fluid in your Blender.

I topped this with Starfruit and Granola today! Cashew butter and Strawberries yesterday.. play with it. Have fun. Eat more greens !

Strawberry , Vanilla , Rose and Peach Smoothie Bowl!

Lately I’m adoring starting the day with a great big Smoothie Bowl ! Cold and
Sweet , it feels like starting the day with some delicious dessert. I promise you , that’s my kind of morning.

This one’s a new one. Mainly because of my new obsession with all things Rose. It makes everything feel so exotic. I adore it.

Recipe :
2 Frozen Bananas
1 Cup Strawberries
1/2 tsp Vanilla
1 tsp Rose water.
Almond Milk
1 Peach
Sprinkle of Rose Petals
Sprinkle of Pumpkin seeds.

Pop the Bananas , Strawberries, Vanilla , Rose Water and Almond milk in a blender and blitz till smooth.

Top with Peach and Rose petals and a sprinkle of seeds if you like 🙂

Seriously seedy. Grain free Porridge.

Let’s talk about seeds. The seeds that we think are grains but are actually not at all. No Grains , no gluten just seeds. Buckwheat , bit misleading in its name as its not a grain nor does it have anything to do with wheat. So gluten free and ready to go. Versatile little thing. I love this toasted in energy bites , cooked just like a grain on the side of a salad or meal , and now in my grain free Porridge. It’s great on its own just soaked overnight too! No cooking required !
Armaranth , this lovely little seed also can be misconstrued as a grain but it’s all seed baby.
Millet. I love this one, it’s a cous cous type little ball of goodness. I love fluffing this up and chucking it in Salads.
I also used whole Flax. Just for some added goodness.

I pop a 1/4 of this mix per person into a jar with water the night before and soak them, it activates the seeds , and also cuts down on cooking time.. I’m all for extra time in bed first thing so any little helps. Specially when it only takes a minute the night before. If you haven’t soaked , don’t worry, just let them cook longer till tender 🙂

Recipe is for one big jar.

1 Cup Armaranth
1 Cup Millet
1/3 Cup Flax
1 Cup Buckwheat.

**optional addition of Chia **

Pop everything in a jar and give a good shake !

To cook :
Soak 1/4 Cup per person the night before.
Then drain and rinse in a fine mesh seive.
Pop into a pan with 1/2 cup of Milk per serving. Top up after if you’d like more !

Cook for 10-15 minutes till cooked and tender.

Add sweetner of choice. Vanilla works great here too.

And top as you like 🙂 I must say Peach and Blueberry is a lovely combination.

Fig and Cherry is another personal favourite !

Tropical Bircher Muesli ! Raw and Beautiful.

Waking up to Breakfast already prepared has me feeling pretty relaxed on a morning. I love to start the day set up right. And when your breakfast is naturally sweet and beautifully colourful , it makes me smile all morning. This really is like a bowl full of tropical holiday flavors and I adore it. Make it all the night before and off you go. Perect for lazy weekend Breakfast in bed or make it in a jar and you have a portable Brekkie to go. I love how versatile overnight Oats can be.
This serves two.

Recipe :
1 Banana
1 mango
Lime Zest
Handful of Blueberries
2/3 Cup Oats
1 Tbs Chia (Optional )
Milk of Choice ( I iise Almond )
Sweetner of choice (I used Honey)
Optional herbs.

This really couldn’t be simpler. Pop Banana , half the Blueberries , half the mango (peeled and chopped) into a bowl with lime zest and mash together with a fork. Sprinkle Chia on top and pop Oats on top again. Then pour enough Milk to completly cover oats and drizzle with Sweetner. Leave this over night and then top with remaining Mango and Blueberries. Add herbs if you want too. Mint or Basil would be beautiful here.

Breakfast Rice Pudding!

Ok. So. Confession. I have no idea how you’re supposed to measure Rice. Packet portions ? Who am I feeding here exactly ?? What person eats that amount of Rice ?? Why isn’t there an easy way to do this ?? I can’t waste all this food ! The struggle is real….
So other than me being inept at portion control , let’s figure a solution. Rice Pudding. For breakfast. I know. But seriously , why not ? Slow release carbs ? Check. Almond milk protein ? Check. Fruit topping? Check. I could be describing any other Breakfast grain here. So why not Rice ? Specially if it stops wasting perfectly good cooked Rice. I was sold. It was creamy and delicious , and felt like a real treat too.
I made the base the night before , just like I would Overnight Oats, so it was already waiting for me first thing. I really love breakfasts like that.  Next time I’ll be cooking rice , I’ll be sure there’s some left over ! This recipe made two portions!

Recipe :
1 Cup Cooked Rice
1-2 Cups Almond Milk (or milk of choice
1 Tsp Vanilla
1 Tbs Sweetner of Choice
Optional 1tbs  Chia seeds.

Topping :  Fresh Fruit , Fresh herbs , Nut Butter

Mix cooked Rice , with 1 – 1.5  Cup Milk, add sweetner and Vanilla and Optional Chia.
Pop in a bowl in the fridge over night.

Next morning see what the consistency is like and thin out with more Milk if needed. Top with what ever fruit you have on hand and fresh herbs to keep things exciting. Some Nut Butter would work great here too !

Pear and Beetroot Overnight Chia Oats.

Ok. So. I’ve always loved my Pear and Vanilla Porridge. But I always wished there was a way to have a overnight Raw version, you know that wouldn’t turn brown …. it always bugged me when I’d make them hot instead. Until I recently read one of my favourite cooks second book! And spotted her Beet overnight oats and a little light bulb went on. Pink Pear oats hahah! I’ve always loved the combination of Pear and Beets. Specially in salads… so why not give this a go ? And it was great ! The colour is pretty amazing too! This paired with some extra sweet Mango and it was just perfect in the sun this morning. Thank you!!
I also have been looking for recipe to use my new Nasturtium Blooms on. I’ve been wanting to use edible flowers for a while, and I love they way they look to naturally decorate, but I’m also quite excited to try eating them!

Recipe :
1 Roasted Beetroot
1 Pear
1-2 Cups Almond Milk (depending how thick you want it )
2 tbs Sweetner of choice
2 Tbs Chia (Optional)
1 Cup Rolled Oats
1/2 Tsp Vanilla

Toppings : Mango , Seeds.

Pop everything except the Oats and Chia in a food processor and blend till smooth. Then stir in the Oats and Chia. Add as much or as little milk as you like, it will soak up over night. I think I used about 1 1/2 Cups and it was nice the next day. You can always add a little more the next morning if you want to thin it out !  Pop in a jar or airtight container and put in the fridge over night.
The next Morning your beautiful pink Oats will await !

Top as you like , but Mango worked beautifully here.

Carob Strawberry Pancakes with Fudgey sauce.

Pancake experiments are some of my favourite experiments. And I can see these ones being a new favourite !
I’m addicted to Carob. Since I can’t eat Chocolate anymore , Carob really stands in for me. It’s very rich so has that Dark Chocolate vibe to it which I love as that was always my favourite anyway! Another great little thing about Carob , is it naturally Caffeine free unlike it’s Chocolate counter part . Carob and Strawberry are another little match made in heaven so that’s the route I went with these today.

Recipe:
3 Bananas
4 Tbs Flour
1 tsp Baking powder
2 tbs ground Flax seed (Linseed)
2 tbs (Heaped) Carob Powder
Salt (sprinkle )
Spray oil.
Strawberries.

Pop the Bananas in a processor and blitz to a puree , then pulse in the rest of the ingedients except for the Strawberries.

Give the mixture a few minutes to thicken up while you heat a pan or a skillet. Spray with a good coating of oil (I used Avacado). Then chop your Strawberries up quite small.

Add a heaped table spoon of mixture for each pancake. Then pop a few pieces of Strawberry in each.

Once they’ve puffed up a little after 2-3 minutes. Give them a flip.

The second side won’t take to long so keep an eye on them.

Optional Fudge Sauce:

1/3 Cup Milk of choice (I used Almond )
2 Tbs Carob
2 Tbs Maple Syrup

Warm Milk gently , and add Carob and Maple to a bowl. Then whisk in warm milk. Use a little more cold milk if it needs thinning out.

Pour over pancakes and top with more Strawberries !

Beans on Toast!

Ok I admit it. I was 23 before I ate beans on toast. I have always been horrified, and I mean horrified by tins of baked beans. I couldn’t ever understand the appeal. The colour looked all wrong. Processed. Just everything. No way no thanks. At one point I remember having a mini breakdown after my boss dripped “bean juice” on my foot at work….
Ok so less about my mental instability and more about the good stuff. Canellini Beans. Those beans you find in Italian dishes , Minestrone , Pasta Fagoli , that kinda thing. These always seemed to appeal a little more. I desperately wanted to incorporate more lean plant proteins into my day to day food. And that’s where this plan came from….
This is a quick and easy recipe ideal for a quick Lunch or late Brekkie, but I won’t judge you on when you eat this. Its simple and satisfying , give it a go.

A certain best friend of mine can vouch for me. It’s a favourite of hers. And here it is so she can munch away 🙂

Recipe :
2 Large Tomatoes
2 heaped Tbs tomato paste
1 tsp Maple syrup (trust me )
Salt.
I Carton Organic Canellini Beans drained and rinsed.

To serve : Toast or Wedges work great

Dice the tomatoes small and chuck in a non stick pan, add a good splash of water to keep them fluid , and the tomato paste. Cook this till everything is soft and squidgy then add the Maple Syrup stir and give it a taste for salt.
Add your beans and warm everything through together.

A good pile of these on toast works wonders !
